Cake

Hi guys! I was rummaging around my blog, and found a picture I had saved and wanted to share! So, a quick dive into one of life's greatest indulgences: CHOCOLATE!!! Ah chocolate, how I love thee...

A while back, I decided to try a raw "cake" recipe. It was from Ani's Raw Food Desserts - a recipe book filled with foods made from fruits, nuts, seeds, and natural sweeteners (such as dates, honey, etc.) No artificial sugars here!

I made the Raspberry Ganache Fudge Cake, which in her book looks like this:




Looks darn tasty, if you ask me! Man, makes me want to drool just looking at it!

....*drool*....

Ok, ok, moving on! *wipes mouth*

Dave is not a huge fan of raspberry due to the seeds, so I altered mine to be orange-strawberry style instead. And I just made a small cake because I wasn't sure how it was going to taste.

And here's how my version turned out! (Ok, not as photographically gorgeous - I need to practice more with presentation, and get my professional photographer someday. But I think it's still a darn good looking cake!)



The "cake" part is walnut-based, where you process the walnuts until they are a coarse powder. I wouldn't necessarily call it a "fluffy" cake - definitely dense. But it was sweet and chocolaty thanks to dates and organic cacao powder! And the fudgey icing was rich and creamy thanks to the avocado blended in.

So, yes, it's still a high calorie delectable treat... But you get all those good healthy fats, antioxidants, and some nutrients - rather than nutritionally empty processed sugar, saturated fat loaded creams, and processed stripped white flour. I'm all for eating this instead!

Next week I'll be trying her Strawberry Kream Cheezecake (don't you love her play on spelling to denote it's not dairy or soy based creams and cheese?) :) I love to have a natural dessert on hand so that when the sugar monster strikes, I'm prepared! Be gone, vile sugar temptress!! ;-)
